Easter at Home & Homemade Peking Duck (Recipe)

[Translate] Homemade goose fat biscuits topped with sliced Johnston Country Ham and poached eggs Easter, or any major holiday, is always a feast at home. Since I have this wonderful ham from Johnston Country Hams, I couldn’t resist starting Easter morning with homemade goose fat biscuits (it’s based mainly from this recipe, except one third of the fat is with Kerry Gold butter) topped with sliced the said ham, poached eggs and a smear of Dijon mustard to cut the salt and flaky biscuit. Of course, there’s more… (more…)

New Year's Day 2013 Dinner

[Translate] Homemade savory goose liver pastries (鵝肝酥); Hard Cider to drink; Snow peas with prawns Happy 2013! As 2012 flew by, it’s been a good year for me. Celebrating at home, my family and I cooked a Chinese-style feast. We started with savory goose liver pastries (鵝肝酥) baked from scratch. The filling is a mixture of Schiltz Foods’ fatty goose liver, Pat LaFrieda ground beef (from their hamburger blend), onions and a touch of oyster sauce that worked wonderfully with the lard based flaky crust. We paired the meal with Bellwether‘s Black Magic Hard Cider, a delicious semi-sweet hard cider..

Thanksgiving 2012 at Home

[Translate] Part of my Thanksgiving table and Schiltz Foods’ uncooked frozen geese products My family has a tradition of being unconventional for any non-Chinese holiday so we tend to experiment our menus beyond the standard turkey as of recent years. This year I opted to try out a family-owned geese producer Schiltz Foods‘ for their amazing geese products and their smoked goose was the star of our dinner table in lieu of the turkey. Here’s what we cooked, baked, drank and ate this Thanksgiving (with a few recipes with the geese products toward the end)… (more…)

Summer Dinner at Home

[Translate] The spread A recent dinner at home a few weeks ago was an ode to summer. Basking bright, warm summer sunset on my balcony with friends and family. Fancy pants topped chicken sausages We had large steamed then grilled lobsters, a huge, juicy bone-in prime-rib (I’ll give you that recipe at the end of the post), and fancy pants topped fresh chicken sausages. Why chicken sausages you ask? Well, it’s arguably the most neutral flavored meat sausage that can go with almost anything. The most trickiest to work with is the foie gras, truffle aioli toppings since I have..

Christmas Dinner – Carnivore's Feast of Pat LaFrieda Meats and Pure Bred Lamb

[Translate] Christmas table setting, Whole mustard-rosemary Chateaubriand roast and my portion of that meat Christmas dinner was essentially a carnivore’s feast. Don’t get me wrong, I love my vegetables but since I’m thinking holidays, I normally associate large hunks of meat to share with friends and family. That’s when I start ordering from Pat LaFrieda Meat Purveyors for their fine butchered meats and Pure Bred Lamb from Waynesburg, Pennsylvania for its distinguished holistically raised lamb. Pat LaFrieda is a family-owned and operated butchering distribution are the meat source of over 600 restaurants. They also the source gourmet burgers of popular..

Caviar Dinner for Christmas Eve

[Translate] Caviar Star’s variety of caviar and a slab of salmon fume My Christmas Eve dinner almost sounds like a New Year’s Eve dinner, come to think about it. Since I’ve cranked out different dinners for different guests for the past two days, I planned to create a lighter yet still very luxurious dinner to kick off Christmas with Caviar Star‘s caviar and their sublime salmon fume. Caviar Star (formerly known as Great Atlantic Trading) is a premium importer and supplier to America’s best distributors, hotels, gourmet stores, fine food web sites and cruise lines. They offer only the finest..

My Decadent Thanksgiving Dinner – Foie Gras and Truffle-Centric

[Translate] My dining room, foie gras torchon with pomegranate and cocoa, and black truffle bacon brussels sprouts This year’s Thanksgiving dinner was the most over-the-top decadence as my menu was not based on American traditions whatsoever. If you have to think about it, it reads French than any other cuisine. (I have admitted in the past, I am a Francophile.) Sous vide meets foie gras The menu focused mainly on the truffles I had from Gourmet Attitude and my recent acquisitions of SousVide Supreme Water Oven and Vacuum Sealer and the extraordinary Hudson Valley Foie Gras. The SousVide Supreme water..
