During my trip to Amsterdam, I had a great dinner at Wilde Zwijnen, translated from Dutch, Wild Boar. This restaurant is situated in the Oost (East) side in the Indonesian neighborhood (Indische Buurt) of Amsterdam.
The interior design of the place could be called industrial chic – a lot of exposed brick and simple furniture, with a few hanging plants and some elegant wall hangings. Beautiful concrete floor and industrial, wooden tables where your name is written in chalk if you have made a reservation. It still feels comfortable and reminds me of many of the new, small restaurants in New York City.
The food served here is traditional Dutch cuisine with their own twist. However, all prepared fresh, local ingredients. The fluke with potatoes, Romanesco and crumbled blood sausage was a delicious first course. The fish was incredibly silky and the blood sausage added some subtle hint of minerality.
The wild boar stew cooked with Bruut Gajes beer with boar and caraway sausage, salsify, green cabbage, romanesco, and Nicola potato felt like a bowl of stew you’d want to eat on a chilly night in. It’s hearty and comforting and absolutely tasty.
For dessert, we had the Dutch pearl barley pudding with nut crumble, chocolate sorbet, poached pear, and ginger tuile. This simple looking dessert was very good. The tender, sweet pear and the creamy barley pudding worked together with the zing from the ginger tuile. The best part for me was really the incredibly creamy chocolate sorbet; it felt as dense as ice cream and I would have thought it was that if the wait staff didn’t tell us.
