New Year’s Day 2013 Dinner

Homemade savory goose liver pastries (鵝肝酥); Hard Cider to drink; Snow peas with prawns Happy 2013! As 2012 flew by, it’s been a good year for me. Celebrating at home, my family and I cooked a Chinese-style feast. We started with savory goose liver pastries (鵝肝酥) baked from scratch. The filling is a mixture of Schiltz Foods’ fatty goose liver, Pat LaFrieda ground beef (from their hamburger blend), onions and a touch of oyster sauce that worked wonderfully with the lard based flaky crust. We paired the meal with Bellwether‘s Black Magic Hard Cider, a delicious semi-sweet hard cider blended..

Best Memories & Meals in 2012

It’s kind of hard to wrap my mind that it’s almost the end of 2012. Time and life never takes a break but sometimes serendipitous things happen. (In relatively random order.) First thing in mind would be my graduation gift from the luxe chocolate and pastry brand, La Maison du Chocolat… A large Andalouise cake from La Maison du Chocolat My Andalouise cake from La Maison du Chocolat is something I never anticipated them gifting me and sending well wishes for my graduation from graduate school. This seasonal cake is intensely flavored of lemon pastry cream and chocolate mousse, chocolate..

Meatopia 2012 at Randall’s Island – Memphis in May meets the Glastonbury Festival

Mini pies and apple apertif on the ferry & storm clouds rolling in Meatopia, organized by Josh Ozersky & Co., at Randall’s Island this year was a pretty awesome barbecue event. Comparing to last year’s Meatopia at Brooklyn Piers, this was a lot better organized, there’s actually lots of space to walk around, and of course there’s the glorious smoked, grilled, and/or roasted meats from prominent chefs from the New York City area and beyond. The partial explanation of the ample space at Randall’s Island was because of Mother Nature being a tempestuous woman. Earlier in the morning, it was..

Photographing for Pat LaFrieda

Pat LaFrieda: The White Label Burgers I had the recent pleasure of working with Pat LaFrieda Jr. and his wonderful team for photographing their special White Label burgers. You might be inquiring what would make them so special? My answer would be it’s usually made only for super chef Michael White for his restaurant Ai Fiori – and the restaurant only serve this for lunch. This label is a mix of chuck, brisket, short rib, and aged rib-eye. When the burger is cooked to a medium rare, it’s rich, luscious, hefty (it’s a half pound of meat for each patty)..

Super Bowl 2012 Party At Home

The starter spread, Cheese platter with Emmi Roth Cheeses & Vegetable crudité Yesterday was a great Super Bowl game as the New York Giants won! Woot! Beyond the sports fanfare, the Super Bowl is a food holiday, if you’re willing to admit it or not. Since I invited a group of 8 friends watching the game and cheering on, I might as well cook a whole bunch of food and thankfully, a few came in early to chip in some help. Pat LaFrieda Original Blend and Shortrib Blend burgers & Platter of Beef Brisket and Lamb Burgers We ended up..

Christmas Dinner – Carnivore’s Feast of Pat LaFrieda Meats and Pure Bred Lamb

Christmas table setting, Whole mustard-rosemary Chateaubriand roast and my portion of that meat Christmas dinner was essentially a carnivore’s feast. Don’t get me wrong, I love my vegetables but since I’m thinking holidays, I normally associate large hunks of meat to share with friends and family. That’s when I start ordering from Pat LaFrieda Meat Purveyors for their fine butchered meats and Pure Bred Lamb from Waynesburg, Pennsylvania for its distinguished holistically raised lamb. Pat LaFrieda is a family-owned and operated butchering distribution are the meat source of over 600 restaurants. They also the source gourmet burgers of popular in..
