I admire Peanut Butter & Co.‘s peanut butters for years ever since they started selling their jarred peanut butters. My personal favorite is the Cinnamon Raisin Swirl; it’s like my Nutella, I eat it straight of the jar with a spoon. It’s perfect by itself combining sweet spice with the earthy peanut butter.
The newest peanut butter flavor I’m intrigued with was The Heat Is On since Doug Quint’s Big Gay Ice Cream Truck started lining his cones with this stuff for the past month or so. I’m enamored with the really spicy kick when I eat that said cone – it burns but it’s an addictive kind of heat. (Of course, the creamy, cooling sensation of his soft serve ice cream softens the burn.)
For my personal use at home, I use The Heat Is On a lot for Asian-inspired peanut dipping sauces, mixing it with soy sauce, fresh lime juice, and vegetable or peanut oil. They’re causally tossed into cold noodles to give it some spicy heat contrasting the temperatures to a salad dressing (with different consistencies – thicker on the former, vinaigrette-like on the latter).
Frankly, I haven’t used cake mixes over a decade just because I have issues with manufacturers putting chemicals and additives into mixes that I don’t know what the heck I’m eating. But, Peanut Butter & Co’s Mighty Fine chocolate peanut butter cupcake mix ingredients panel is straightforward with their ingredients (e.g. I understand and know what’s in the box without inquiring my chemistry/pharmacy friends) that I don’t mind baking with it.
The cupcake mix is easy to use for any person who is baking-challenged. You just grab some room temperature butter (or just leave your butter out on your counter until it’s softened), eggs, and water. Follow the instructions on the box, bake, and you get your chocolate cupcakes. The peanut butter element is actually the frosting, which was simple to make as well. You may be artistic with the frosting and use a piping bag to do some fussy decorating, like I have, or just grab a spatula and shellac those cupcakes to to your liking.
The cupcakes were a hit with my family, when I had my coffee craze and served it along when I didn’t have enough time to bake something whimsical/challenging. The cupcakes were deeply chocolate-y, tender, moist and not sweet with the frosting provided the sweetness and the right amount peanut butter flavor.
I guess Peanut Butter & Co’s is building on my love for their peanut butters, as they keep cranking out delicious peanut butter flavors and now, their baking mixes are for my emergency days or lazy days when I don’t want to bake something challenging.
