But it looks inspired and very creative which I love. Your description of the cocks comb was perfect - I could almost feel it in my mouth. Americans really do have a major problem with all things warm and gelatinous. I would def. give this a try as we love, love, love offal. Your pics are beautiful! We make fidueos often at home, but I gotta say, as gorgeous as that dish looks at CM, it looks super annoying to eat. We'll have to put up our fidueos recipe up soon! The addition of fennel seems very natural, I think I've seen that on a couple menus now but I haven't had the chance to try it for real.
